Mushrooms With Sherry Recipe

This is a recipe for mushrooms that comes from Spain and that will please any mushroom lovers in your family.
It serves about six, and can be served as a starter or an entree depending on portion sizes.

Mushrooms With Walnuts and Sherry Recipe

You Will Need:

2 T. butter/margarine
2 Tbs canola oil
1/2 pound (3 cup) organic mushrooms
0.5 cup walnuts - finely chopped then toasted lightly
2 Tablespoons sherry or fortified wine
1 tbsp fresh lemon juice
one t. grated orange/lemon peel
Two Tablespoons fresh chopped parsley
Salt

Instructions:

In a skillet or frying pan blend the oil and butter.

Turn the heat to medium/hot and transfer the mushrooms to the pan, cooking until they are tender.
Add walnuts, sherry, lemon juice and citrus peel. Heat the mixture for one minute, mixing well to ensure the mushrooms are covered with the lovely juices.

Add salt to taste, and sprinkle with chopped parsley just before serving.
